Process – Natural Guamo (Caturra)
This coffee begins with careful selection of ripe Caturra cherries. The cherries undergo a 36-hour anaerobic pre-fermentation in GrainPro bags, creating an oxygen-free environment that boosts fruity and tropical aromatics.

They are then transferred to shaded, hermetic tanks for a controlled 96-hour fermentation at approximately 23°C. This extended fermentation enhances sweetness and acidity, developing vibrant notes of cherry, blueberry, green apple, and tropical fruit, balanced with gentle citric brightness and a cocoa finish.

After fermentation, the cherries are mechanically dried over seven days, with controlled humidity stages to ensure slow, even moisture reduction. Finally, the beans rest in GrainPro bags for 30 days until stabilized at 10.5% moisture, allowing flavors to fully integrate for a clean, complex, and balanced cup.
